"Under the wire" seems to be the theme of my life these days.
My normal, plan-in-advance, organized self has flown the coop.
Carefully prioritized lists with time lines and specific action items are a fleeting memory.
So goes the tomato tartlet.
A last minute throw together...
But I feel like I counterbalanced it by making the zucchini tagliatelle.. Four weeks early :-)
So, if something needed to be pulled off "under the wire", I guess the tomato cheese tartlet was the dish to do with it.
Pesto in the freezer. Check.
Tomatoes on the counter. Check.
Puff pastry, mozzarella. Store run.
Bake the pastry.
Layer it with pesto.
Throw on the cheese and a slice of tomato.
Run it under the broiler and drizzle on some balsamic and olive oil.
A grind of pepper.
Voila.
Under. The. Wire.
Oh, and if anyone knows where organized me is hiding, can you please send her back? I miss her.

ReplyDeleteYep, I didn't even look at the recipe until Thursday night and never would have managed it if a store run had been necessary. Somehow I still had puff pastry leftover in my freezer from something or other and I pretty much always have goat cheese. I love your little mini tarts, they look like they could be fancy appetizers at a cocktail party.

ReplyDeleteUnder the wire here as well. But for me under the wire is VERy early as far as FFwD is concerned. Phew. This only got done 'cause I had everything and hubby told me he was going to be late. Balsamic is a great touch!

I have no problem with "under the wire" as long as it's a dish I can throw together. Your tarts turned out great!
ReplyDeleteSometimes I believe that being organized is grossly over-rated (usually that is my excuse for when I am scatter-brained)! Your tarts look great, and definitely an awesome recipe to throw together.

ReplyDeleteYou're so square, Cher. Like yours. And, your family is very lucky if they were served that dinner last week. They better not complain about you not being organized when you can put that on the table. I think order will be restored once you get your oldest daughter off to college --- that's a big order --- getting her ready and organized. Then you can just take a deep breath and put your life together again. You'll also spend a great deal of time missing her --- welcome to the "first chick flying the nest" syndrome.
ReplyDeleteJust blame it on the Olympics - that's what I'm blaming not being done with the galette for BWJ on. They only happen once every four years! The normal non-sports loving me is completely gone for the 2 weeks of the Olympics and I hardly get anything done. I think your tarts look delish and I can't wait to see the tagliatelle in a few weeks!
